Lentil & Kale Soup

How to Make It
In a pot, sauté onion, garlic, and celery in olive oil. Add 1 cup dry green or brown lentils, 4 cups vegetable broth, diced carrots, chopped kale, 1 tsp smoked paprika, and 1 tsp turmeric. Simmer 30 minutes until lentils are tender.

Top with sliced tomatoes and green onions when serving.
